Pumpkin Seed Pesto

Pumpkin Gnocchi with Sage Butter

Ingredients:

  • 1/2 cup pumpkin seeds, roasted
  • 1/2 cup olive oil
  • 1/4 parmesan cheese, grated
  • 1 cup basil
  • 1 green onion
  • 1/4 cup parsley
  • 1 clove of garlic
  • 1 lemon, juice and zest
  • Salt & pepper to taste
  • Cooking oil

Instructions:

  • Place all of the ingredients into a food processor and blend until smooth. Season with salt and pepper, to taste.

Prep Time: 5 minutes

Cook time: 5 minutes

Yield: 1 cup
