Can you tell me how many cups of mango is in one package ?

1 package of freeze dried mango is 1.4 oz. Equivalent to aprox. 1 1/2 cups of mango but because it has been freeze dried it weighs virtually nothing.

Can vanilla [liquid] be used in place of vanilla paste?

yes, you can just use 1 tsp. vanilla extract or a bit more if you like the flavor.
